Healthy Casserole

I am typically a big meat gal but I love this dish and it's vegetarian!

Broccoli Casserole

Ingrediants
2 tbsp olive oil
4 cloves garlic
14 ounces diced tomatoes
8 ounces tomato sauce
6 ounces tomato paste
1 tbsp red wine vinegar
1 tsp dried oregano
1 tsp dried basil
1/2 c chopped fresh parsley
2 c. ricotta cheese
1 c. mozarella cheese
9 lasagna noddles
3 c. chopped brocolli
1-2 tbsp Parmesan cheese

Directions
  1. Heat oven to 350 degrees
  2. Heat oil in skillet. Add garlic and cook 5 minutes until browned. Stir in tomatoes, tomato sauce, tomato paste, vinegar oregano,and basil. Simmer on low while preparing the remaining recipe.
  3. Combine ricotta and mozzarella.
  4. Put 3 lasagna noodles in the bottom of a baking dish. Distribute 1/2 of the cheese mixture over noodles. Now layer with 1/2 of the brocolli. Next, sppon 1/3 of tomato mixture on top. REPEAT LAYER! Place 3 noodles over second layer and spread remaining tomato mixture over noodles. Cover with foil (that has been sprayed with nonstick spray)
  5. Bake for 25 minutes. Uncover and sprinkle with remaining mozzarella and Parmesan chees. Bake uncovered for 10 minutes or until cheese melts. Let sit for 10 minutes and dig in!
