Healthy Casserole
I am typically a big meat gal but I love this dish and it's vegetarian!
Broccoli Casserole
Ingrediants
2 tbsp olive oil
4 cloves garlic
14 ounces diced tomatoes
8 ounces tomato sauce
6 ounces tomato paste
1 tbsp red wine vinegar
1 tsp dried oregano
1 tsp dried basil
1/2 c chopped fresh parsley
2 c. ricotta cheese
1 c. mozarella cheese
9 lasagna noddles
3 c. chopped brocolli
1-2 tbsp Parmesan cheese
Directions
- Heat oven to 350 degrees
- Heat oil in skillet. Add garlic and cook 5 minutes until browned. Stir in tomatoes, tomato sauce, tomato paste, vinegar oregano,and basil. Simmer on low while preparing the remaining recipe.
- Combine ricotta and mozzarella.
- Put 3 lasagna noodles in the bottom of a baking dish. Distribute 1/2 of the cheese mixture over noodles. Now layer with 1/2 of the brocolli. Next, sppon 1/3 of tomato mixture on top. REPEAT LAYER! Place 3 noodles over second layer and spread remaining tomato mixture over noodles. Cover with foil (that has been sprayed with nonstick spray)
- Bake for 25 minutes. Uncover and sprinkle with remaining mozzarella and Parmesan chees. Bake uncovered for 10 minutes or until cheese melts. Let sit for 10 minutes and dig in!
